Sweet & Savory Honey Recipes

Summer isn’t over just yet! As honeybee beekeepers are making their rounds harvesting in the fields, local farm markets and supermarket shelves are stocking up on honey products! You might be hosting a few summer picnics, or a special outing and the question is, what dish will you prepare? Don’t let your ambitious inner chef overwhelm you with overly complicated recipes. Larder and Vine is sharing with us a few easy honey-based recipes you can whip up right at home that everyone at your event will remember!

Honey has many uses outside of being a complimentary sweetener to teas and desserts. When used in recommended doses, honey can provide the human body with many benefits. Pure honey carries several natural vitamins and supplements such as B vitamins, calcium, copper, iron, zinc, and others1. Around the winter season, you may have heard of the miracle healing properties honey may provide. Be aware that honey is typically consumed in smaller amounts and therefore may not equate to the amounts used in studies to validate its long lasting benefits1. This may all come down to which variety of honey you have decided to use. For maximum benefits, we typically purchase bottles of locally produced, darker raw honey.

As a northeastern Ohio local, I like to take advantage of the several local farmers markets available in the area. The beekeeping community is prominent in Ohio which makes the probability of coming across pure, quality honey possible. Additionally, locally produced honey offers unique flavors that you might not be able to get from factory produced honey.

Once you’ve found your perfect jar of honey, it’s time to decide exactly what recipe to follow. The key to cooking with honey is to treat it both as a natural sweetener and a body to hold together other seasonings you may include in your recipe. Keep in mind that honey does have its own bold flavor that could overpower your dish, so we chose recipes that use just the right amount of honey while still allowing it to compliment your overall dish. Summer hosts a very particular cuisine using produce that is locally in-season.

Blueberry Brie Recipe

Servings: 6

Total Time: 20 minutes

Ingredients:

16 oz wheel of brie

1 cup fresh or frozen blueberries

¼ cup honey

¼ cup water

1 teaspoon lemon zest

Crackers, french baguette slices, pretzels, etc. for serving

Directions:

Preheat the oven to 350ºF. Cut the top off of your brie wheel or score the top and place in an oven-proof skillet. Bake for 12-15 minutes or until the center is soft.

Combine blueberries, honey, water, and lemon zest in a saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour over the baked brie and serve with your choice of crackers, bread, or pretzels.

Honey Butter Skillet Corn Recipe

Servings: 4 - 6

Total Time: 15 minutes

Ingredients:

2 tablespoons butter

2 tablespoons honey

16 oz frozen corn

2 ounces cream cheese (cubed)

¼ teaspoon salt

¼ teaspoon pepper


Directions:

1.Melt the butter and honey in a skillet over medium-high heat. Then add the frozen corn and cook for 5-8 minutes, stirring occasionally, until cooked through.

2.Add cream cheese, salt, and pepper. Stir together and let it cook, about 3-5 minutes, then serve!
